You Can’t Put a Kitchen There!!
Since the autumn of 1999, it has been possible for us to offer an
additional state-of-the-art option for our ventilation products. This is
the incorporation of high-output ultraviolet lamps within both the
kitchen canopies or ventilated ceilings. These UV lamps, located
immediately downstream of the primary grease filters, use powerful
ultraviolet light [C-band. 185nm] to break down the oxygen molecules
present in the exhaust air being drawn from the cooking process, then
oxidise them with the Ozone also created by the UV lamps. This
combination of photolysis and ozonolysis has the affect of removing
grease from the airstream and, thereby, eliminates the need for costly
and regular duct cleaning and, equally importantly, with the agreement
of the local Fire Authority, the requirement for expensive fire-rated
ductwork……no grease….far less risk of fire!!
In this day and age of less tolerance of unpleasant odours being
discharged to atmosphere, another benefit of this UV technology is that
the level of lampage within the canopy or ventilated ceiling can be
increased to a point where the cooking odours, to a very great extent,
are also destroyed.
We have, as at September 2007, installed more than 650 systems
incorporating UV-C technology and designed to eliminate grease from the
exhaust duct / fan, and significantly reduce the cooking odours to a
level where low-level discharge from the kitchen ventilation system has
been utilised with great success.
It has to be said that wherever it is possible, and practical, to take a
commercial kitchen ventilation exhaust duct to the roof of a building
where it can terminate with a vertical discharge accelerator cone, then
this should always be the preferred option. However, for those buildings
where this is not a practical proposition, Halton Foodservice can offer
a viable alternative.
Kitchen Canopies versus Ventilated Ceilings?
When all is said and done, the answer to this question usually boils
down to personal preference.
Simply because the point of extraction within a conventional kitchen
canopy is located closer to the source of the heat and fumes, it is
generally accepted that a canopy will be more efficient than a
ventilated ceiling. This point was much more the case a decade ago but,
with designs of ventilated ceilings improving all the time, the
differential nowadays is quite minimal.
Historically, ventilated ceilings were the preferred option for those
projects where the kitchen or servery was open-plan and in view of the
customers.
To make the decision as to whether or not to specify a ceiling in place
of a cluster of canopies becomes even closer when considering the
initial capital costs. Taking into account the fact that with a
ventilated ceiling this eliminates the need, and cost, of a conventional
suspended ceiling in the area, comparing like-for-like there is very
little cost difference. In the past there was a feeling that a
ventilated ceiling would work efficiently using less exhaust air than
its canopy counterpart. This is a myth and is simply not the case. It is
the cooking equipment that determines the quantity of extraction that is
required for a given kitchen, not the equipment doing the extracting.
The conclusion, therefore, is that if aesthetic considerations are
important, a ventilated ceiling should be the number one choice.
